We absolutely love the unique and unlimited variety of honey types that our bees can produce at unusual places!  Artichoke thistle honey demonstrates what is possible!

A medium dark honey that is overflowing with complex vegetal and caramel sweet flavor.  This honey comes from bees foraging in big fields of blooming artichoke thistles.  The farmer plants California poppy, alyssum, and other wildflowers between the rows of huge purple artichoke blooms to attract even more bees.  This honey is great in tea, as an ingredient in baked goods, and our absolute favorite on BBQ pork spare ribs.

Flavor profile is robust showing flavors of steamed artichoke hearts and mixed vegetables, all on a backdrop of fruity sweet caramel complexity.

This honey will naturally crystallize.  Crystallized honey is great for spreading on toast, and a spoonful will easily dissolve in hot tea.  To un-crystallize the honey, put the whole jar with lid on in a pot of very hot water for 15-20 minutes.
